I am learning oud and have been using a very thin guitar pick as aposed to the long traditional mesrab. Is this a bad practice? Should I be using the
mesrab or does it matter one way or the other?

Either. But a rishi works best in my oppinion especially for playing fast and tremelo.

IMHO,
The traditional risha or mizrab our plectrum is the way to go if you're looking for a traditional sound and technique.
I've played guitar for over 30 years using fingers or flat pick. Its a difficult transition to make if you're used to a flat pick technique
but the rewards can't be overstated! Traditional risha technique is much more sophisticated - allows for a MUCH more relaxed hand (if you do it
right!) and thus allows for faster tremolo with more control. There are numerous types of oud plectrum, different materials, stiffness, etc... you
will need to experiment and it can be frustrating but I think its well worth the effort.
