It’s not exclusively Tunisian, it’s across the Maghreb. Abdelsalam Chiki in Fes Morocco could make you one I’m pretty sure, his father plays it.

I have a oud from Tunisian Luthier Ridha Jendoubi and vouch for the quality of the instrument (in the process of ordering another one).
