This is a processed sound. There is some digital ambience added. But one can infer what the real sound is anyway. I find it a good musical sound but rather different from any traditional oud sound. This is something new in both sound and design. I wonder how much the low bass A course is coloring the sound of the other 6 courses. This instrument might sound more typically oud-like if strung C through ff rather than A through cc. I also wonder what the sound would be with this design but a soundboard of spruce rather than cedar. I also wonder why luthier Stenzel says that the cherry wood he used for the bowl is not unmusical like most cherry (or words to that effect). I have not found cherry to be at all unmusical, having played good sounding guitars with cherry back and sides. Maybe European cherry and American cherry are different woods. That could well be the case.

As I know the oud from my own direct experience, I can only assure you: whatever has been done to the recording, it doesn't push it where it is not of it's own accord. It gives quite a faithful rendition of how I hear this instrument in real world...
