Novice restring job, how am I doing?
I have a set of 11 D'Addario but I didn't open it yet. First, since this is my first time I took the original strings off and put them back on again
to practice. I took photos and put them on Imgur. How am I doing?

I think you did a GREAT job for first restring. What a smart idea to practice on the old strings first! Maybe they are still good strings..I would see
how they sound afterwards before using up the newer ones, just in case they aren't too old.
Some of the strings you have many wraps, for example the A's and D's....so how does one know how many wraps?
Great question. It also depends on where the string hole in the peg has been placed. If it is in a good spot, more central, then you could aim to wrap
3-4 extra times is good...more than that and you may have too many wraps to push the peg in tightly, again depending where they put the peg hole.
What I do is use a technique I learned from my Taylor Guitar local rep when he upgraded my pickup system on my taylor 614ce....anyways, I try to cut
the string 3 peg lengths longer than the peg I am going to string. Taylor does 2 lengths for guitar(see vid here at 1:00 mark onward https://www.youtube.com/watch?v=uXEkDR_-D88&ab_channel=ElixirStr... ), but because pegs are closer together on OUD, I use 3 peg lengths as a rule myself.

Thanks for the tips Matt,
I know that Taylor ootoob well and agree it's very good. My own method putting steel strings on a guitar is almost identical. There are so many really
bad ootoobs about stringing guitars that I don't easily trust those about ouds. So thanks for the one with Gilad Hazan from Arab Instruments.
Gilad recommends 10 cm extra, which is more than your 3 peg-spacing, about twice as much. But he also leaves a tail that he trims once the string has
tension. I'm going to aim for 3-4 turns with the bass strings and 5 with the unwrapped strings. I'll measure the ratio of peg spacing to turns as I
go.
My oud came with 10 strings, F A d g c, that really don't look nice. Plus I want to try the low C.
I'm going to finish the peg holes too, they are rather ragged.

Who uses the method described here https://youtu.be/ufWWaIoKprk?t=126 (skip the first 2 minutes) where the strings wedged against the side of the peg box to create a force holding
the peg tight in its holes?
It seems that could work with some but not all pegs in the standard string pattern. For example, it might work with the c 1, 2 strings but the lateral
angle at the nut would be too high for the g 3, 4.
