Question about a technique with gliss. and 1/4 tone


I'm new to the oud world, but I'm a guitar player and I listen to the instrument (among others) since I'm a kid
And something that has always intrigued me is a technique that I've heard violin, clarinet and oud players do a lot:
It's something like a hammer on (with a 1/4 tone), then a down glissando, then another 1/4 hammer on, and so on
I'm sure there is some rule of what scales you can use that, but since I'm ignorant of maqams (I only know hicaz) I don't know how I'm supossed to play it correctly
